for your question and care about your customer needs. Our objective when we
created menu are to serve people with good, nutritious, healthy and not messy
meals. What are TVP, ISP and STPP?
11. TVP
is known as textured vegetable protein, soy
meat, or soya chunks are defatted soy flour product, a
by-product of extracting soybean oil. It is
often used as a meat analogue or
meat extender. It is quick to cook, with a protein content comparable to
certain meats.
22. ISP
is known as isolated soy protein. It is made from soybean meal that
has been dehulled and defatted. Dehulled and defatted
soybeans are processed into three kinds of high protein commercial
products such as soy flour, concentrates and
isolates.
33. STPP
is known as sodium tripolyphosphate (STPP), or tripolyphosphate (TPP), is
an inorganic compound . It is the sodium salt of the polyphosphate penta-anion,
which is the conjugate base of triphosphoric acid. It is produced on a large scale as a component of many
domestic and industrial products, especially detergents.
Many
of the commercial burger patties companies use three kind of additive in their
ingredient. ISP is using a lot in patty
burger making as an inert material. It can reduce half fresh meat in patty
making process. Example 1kg of meat can be added with 1kg of ISP to create 2kg
of patty. Sometimes we call it as ‘cheat’
ingredient purpose to lower their cost, make more profitable and to reduce
market price. According to the USDA, over 90 percent of the soybeans grown in the U.S.
are genetically modified, so most ISP comes from altered beans. “This means soy protein isolate
is chemically modified, processed and filled with pesticides. The chemical
process used to isolate soy protein often leaves behind substances you don’t
necessarily want to be eating, like aluminum and hexane. STPP
is a chemical that use in patty to hold the juice inside meat to make it more
resistant and can be stored in long period.
